BREAKFAST | French Toast with Local Honey, Crème fraîche, Green figs & Fresh Berries

In an attempt at battling hayfever this year I am trying to eat as much honey as I can and it will keep finding it’s ways into things.

Breakfast and breakfast food are some of my favourite things. At my parents house whenever there’s a holiday or a big family gathering my dad normally cooks an amazing meal for the evening and then in the morning there’s always fresh croissants, butter, jams, full english, crumpets, juice and always copious amounts of tea.

I make this breakfast a lot, and normally when i have people to stay.


French Toast

  • 2 eggs
  • 1/2 tsp ground cinnamon
  • 1/4 cup milk
  • 4 slices bread


  • Crème fraîche
  • Honey
  • Green Figs in syrup
  • Raspberries
  • Strawberries
  • Blackberries
  • Banana


French Toast

  1. Beat egg, vanilla and cinnamon in shallow dish. Stir in milk.

  2. Dip bread in egg mixture, turning to coat both sides evenly.

  3. Cook bread slices on lightly greased nonstick pan on medium heat until browned on both sides.



I tend to go a bit mad with the toppings and put them all on (because I’m greedy) but you do whatever you feel.

It’s more about adding a dollop of something here, a scoop of something there. Sometimes i put a little chocolate mint in the Crème fraîche just to lift the sweetness of the honey. But that’s about it really. Simple, tasty. Perfect breakfast food.
